These corn fritters are easy to make and easy to eat. They taste so good, your kids (and you) will be grabbing seconds for sure!
Ingredients
- 1/2 cup white flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 eggs
- 1/2 cup milk
- 2 teaspoons canola oil
- 1/2 cup onion (finely chopped)
- 1 can corn
- shortening or oil (for frying)
Directions
Step 1

Combine dry ingredients. |
Step 2

Add eggs, milk, and 2 teaspoons of oil. Stir until moistened. |
Step 3

Add onion and corn. |
Step 4
|
For each fritter, drop approximately 1/4 cup (or less) of batter into hot oil. Fry 3-4 minutes on each side. |
Step 5
|
Drain on paper towels and serve hot. |
