Cast Iron Skillet Chicken and Potatoes

Ingredients
- 1lb Mushrooms (halved)
- 1 Small Red Onion (chopped)
- 5 Red Potatoes (quartered)
- 1 teaspoon Thyme Leaves
- 1/2 teaspoon Garlic Powder
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 2 tablespoons Olive Oil
- 4 Chicken-Leg Quarters
Directions
Step 1

Toss mushrooms, potatoes, onion, thyme, garlic, salt, and pepper in the 2 tablespoons on oil. |
Step 2
|
Place the mixture into the bottom of a cast-iron skillet, or other skillet that can be placed into the oven. |
Step 3
|
Top with the 4 chicken-leg quarters. |
Step 4
|
Place skillet into a 450 degree oven for 40 minutes. |
