Cast Iron Skillet Chicken and Potatoes

Serves 4

Ingredients

  • 1lb Mushrooms (halved)
  • 1 Small Red Onion (chopped)
  • 5 Red Potatoes (quartered)
  • 1 teaspoon Thyme Leaves
  • 1/2 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Olive Oil
  • 4 Chicken-Leg Quarters

Directions

Step 1 Toss mushrooms, potatoes, onion, thyme, garlic, salt, and pepper in the 2 tablespoons on oil.
Step 2 Place the mixture into the bottom of a cast-iron skillet, or other skillet that can be placed into the oven.
Step 3 Top with the 4 chicken-leg quarters.
Step 4 Place skillet into a 450 degree oven for 40 minutes.
Step 5 Enjoy!
